What's fishy in May?

This one is called:


'WHAT DO YOU DO WHEN SOMEONE GIVES YOU A CHUNK OF DORADO'


In the summer and fall in Puerto Vallarta, no one with fishermen friends lacks a steady supply of Yellow fin or Marlin.  In the spring, when it is slim pickings, of a piece of fresh Dorado is like a gift from the Gods.  This is a very simple recipe that can be prepared in minutes. 


-A filet of Dorado

-Lots of fresh parsley

-1/2 cup of milk

-1 tbsp flour

-Salt

-Pepper


Season the Dorado with salt and pepper and steam in a small amount of water in a frying pan just until it loses its transparency. 


Lift gently out of the pan and set aside. 


Combine flour and milk and add slowly to remaining water in pan.


Simmer and stir until flour is cooked. 


Add parsley.

Return Dorado to mixture and reheat. 


Martha Stewart would definitely not like this recipe; it is WAY too easy and doesn't have unrecognizable ingredients.  No capers, no argula leaves, no miso paste, not even a sun-dried tomato.  You probably have all of the ingredients in your house.  Try it, it is low fat and very tasty.
